Teddi Mellencamp does not perceive herself to be the “world’s finest cook,” however, the Real Housewives of Beverly Hills actress believes that you don’t necessarily have to be a chef to keep on budget and be fit. The 39-year-old fitness coach welcomed Us Magazine inside her Beverly Hills kitchen to demonstrate a chickpea salad dish from her new cookbook, ALL IN the Kitchen. Teddi Mellencamp, the daughter of artist John Mellencamp, says a decent playlist while she prepares is a top concern for her.
“Music is a must-have in the kitchen for me,” she told Us. “It makes cooking or preparing meals with your family, listening to music, dancing, and enjoying the moment so much more enjoyable.”
The mom of three is always on the run and wants to write a cookbook with fast, uncomplicated recipes for individuals who have not had time to prepare fancy dinners.
“This cookbook was designed with colleague trainers Chelsea Elder and Mary Cofan,” she stated. “We’re all busy parents who prefer to produce great, scrumptious cuisine that we can bring on the move or enjoy at home with our family.”
Mellencamp confesses she doesn’t have “every tip and technique” for motivating her children to eat healthily. Still, for daughter Slate, 6, she says that “offering varied colors encourages her enthusiasm to eat properly.” She went on to say that it also depends on the stage they’re at right now. “Their sense of taste develops with time, so keep offering them new things and try,” she advised.
Chickpea Salad

Recipe
- Cucumbers chopped (1-2)
- Bell pepper chopped (1)
- Cherry or grape tomatoes halved (2 cups)
- Avocado (1)
- Can of chickpeas (15 oz)
- Lemon juice (2 tbsp)
- Olive oil (1 tbsp)
- Basil chopped (1/2 tbsp)
- Salt (1/2 tsp)
- Pepper
Guidelines
- In a large mixing basin, mix all of the items.
- Toss gently.
- Sprinkle with fresh basil if desired.
